I used a generic hardwood (Home Depot again) angle molding for the trim here, staining it with a gray stain to match the hickory. Close enough! I kind of like the look of the slightly raised dinette floor, too, and didn\'t mind not having to re-engineer the seats, tool box (that the front-facing seat is sitting on), table let, etc., etc., etc. I used a thin piece of fiberboard and more of the gray carpet for the trim panel on the lower wall, under the table. I also put a layer of foam around the dinette bases, where necessary to get the right profile and "feel".
